Smoked Salmon Wontons

by Chef Chris Lee

This smoked salmon wontons recipe is simple but it sure is a crowd pleaser. Bring a touch of Alaska to your party or feature it as your main dish paired with a great fresh mixed green salad and a light white wine.

4 oz cold smoked salmon

4 green onions, chopped finely

1 pound cream cheese, softened

1 tsp sriracha

Fresh pepper to taste

Pinch Old Bay seasoning

1 package of wonton wrapper

Pastry brush and cold water

Add the smoked salmon, green onions and pepper to a mixing bowl and mix well. Add in the cream cheese and mix well. Take each wonton wrapper and place a teaspoon or a little more than a teaspoon of the mixture in the middle of the wonton skin. Brush the wonton with water.

Fold the wrapper in half over the top of the mixture. If you are using a square shape the shape should be a triangle, not a rectangle, after folding it in half. Next use your fingers to fold the two corners up together and crimp the edges. Each of the smoked salmon wontons should look like a package. Set it aside on a parchment lined cookie sheet.

Once you have finish making the wontons, heat oil to 375° and fry until golden brown. Serve the smoked salmon wontons immediately with a side of Sweet Chili Sauce or Ponzu sauce.
